Journal 20

Hello everyone! This week was much better and things are back to normal.

For this week’s post I wanted to write about what I ate every day. I’ve wanted to do this for a while, but kept messing up. This week I managed to record every meal! I would like to include photos, but I don’t have a good setup, and food is especially hard to photograph. The yummiest, nicest-smelling food can look unappealing in a bad photo.

By the way, I eat my main meal at lunchtime. For breakfast, every morning it’s savory oatmeal, and every dinner is some combination of fruit, nuts, bread, and cheese.

All of these meals include spices but I didn’t list them, because I’m not usually the spicer.

Monday

Curry made with onions, ground chicken, red peppers, Indian-inspired southeast Asian yellow curry paste, and coconut milk, with pumpkin-shaped pasta

Came up with this meal because we had a lot of red peppers and thought they would go well with a pack of ground chicken in a curry. As usual, it came out thick but I wanted more curry liquid. I never know how to have more liquid without adding in more coconut milk, but it is high in fat so I like to stick to one can.

Tuesday

Fried shake ‘n bake chicken (homemade mixture)
Onion, garlic, and cabbage pasta with Pecorino Romano

Put shake ‘n bake chicken in the oven, but the power went out, so we finished cooking it on the stovetop by frying in oil, a rare treat. Usually, we’re so excited for shake ‘n bake chicken that we try to have a great complimentary carb, and somehow we always end up doing pasta and tomato sauce. But the tomato sauce ends up taking over the meal, so this time I was determined to make the pasta differently. There was a small head of cabbage, so I fried onions and cabbage, mixed with pasta, and sprinkled with Pecorino Romano cheese. The tasty meal was completed with Oktoberfest beer. The frying of the spices crusted onto the chicken made them come out very interestingly!

Wednesday

Onion, garlic, tomato paste, and bean pasta

Really warm and filling meatless meal. A different take on our usual pasta and beans: an extra can of navy beans went it. Instead of our usual chick peas. I slightly burned the tomato paste. Somehow, result was a very nice chili-like dish with a barbecue flavor.

Thursday

Tuna sandwiches
Beef jerky
Grilled cheese sandwiches

Rough day and very hot. We didn’t feel like a hot meal, so we made tuna sandwiches instead. I was dying of hunger, so I snacked on beef jerky. Should have just made a proper meal from the start! Made grilled cheese sandwiches to finally satisfy the hunger.

Friday

Puttanesca style pasta

The satisfying meal we should have had the day before.

In the evening, for dinner we were naughty and had a pizza party with frozen pizzas and sweet potato fries! Wow those pizzas can be salty! I salt our homemade food very freely but it doesn’t come close to the amount found in processed food. Nonetheless, it was very tasty and a fun treat!

Saturday

Shake ‘n bake chicken (homemade mixture)
Cole slaw
Flour tortillas
Red wine

Shake ‘n bake chicken proper, with a huge serving of coleslaw, enough to constitute being the main vegetable portion of the meal, laid over flour tortillas. Hadn’t had wine in a while, so when we got a few bottles, we were so psyched that we had some with this meal even if it was an odd combination.

Sunday

Onions, yellow and orange bell peppers, hot peppers, and shrimp with shell-shaped pasta
Red wine

Originally intended to be over corn grits, but they were sold out, so used pasta instead.

Small garden update: more tomatoes and peppers have been growing. The hot peppers we used today were peppers from the garden! I was surprised by how spicy they were. I have a hard time getting enough heat from hot sauce, so this was great!
